Mouth Watering Meyer Lemon Bars Recipe
These Mouth Watering Meyer Lemon Bars will also melt in your mouth. Be sure to bake enough! Any of you that have tried my recipes know I like to keep it simple. With so much to do in our busy lives who has time to for anything else. Once again I am bringing you a quick and easy but still scrumptious recipe.
Ingredients
Crust
- 1/2 cup butter, room temperature
- 1/4 cup powdered sugar
- 1 cup flour, any type you like
- pinch of salt
Meyer Lemon Filling
- zest from 2 meyer lemons
- 1 cup granulated sugar
- 3 tbsp fresh meyer lemon juice
- 3 tbsp flour
- ½ tsp baking powder
- 2 large eggs
Preparation
- Preheat oven to 350 degrees F
- Grease 8″ square baking pan
- In large mixing bowl combine butter and sugar until creamy
- On low speed add flour and salt until just combined
- Press dough mixture evenly into the bottom of baking pan
- Bake 10 minutes
- In a large mixing bowl add meyer lemon zest and sugar, mix well
- Add meyer lemon juice, flour, baking powder and eggs, mix until sugar has dissolved and ingredients are thoroughly combined
- Pour mixture over baked crust
- Bake 20 minutes or until filling is set
- Sprinkle with powdered sugar
- Let cool and set
